    Oh hey. Remember me? Yeah, I know it's been a while... but I have a really good explanation.

    You see, for most of the last six months, my kitchen was under construction. Which kind of makes it hard to come up with new recipes.

    The longer version of that story is that The Mister and I realized that since the Toronto real estate market is completely bonkers overpriced, the little starter home we bought a decade ago was now, for better or worse, our forever home.

    So we took a big chunk of our savings and embarked on a big renovation. New walls, new floors, new windows, new entryway, and obviously... new kitchen.

    What was meant to be a two- to three-month project dragged through Thanksgiving, and then eventually through Christmas and New Year's Eve.  In the meantime, I borrowed kitchen space from relatives, baked dishes in a toaster oven, and tried to get creative in terms of my photo shoots (including setting up a little "picnic" scene on the one patch of grass in my backyard that hadn't been trampled into oblivion).

    But the good news is that I finally have my kitchen back, and it is beeeeeeeautiful.

    I have a shiny new gas stove (squeeee!), sleek white cabinetry, and loads of counter space to work on. And after all this time, I have a zillion recipe ideas bouncing around in my head that I can't wait to turn into reality!

    In the meantime, though, here's an older recipe I've been hanging onto for a rainy... errr... snowy day.

    This recipe was entirely accidental. You see, in my hurry to prepare dinner one night I grabbed what I thought was a can of corn niblets from my pantry, only to discover to my dismay that it was actually a can of crushed pineapple.

    Thankfully, I realized my mistake before I dumped the contents of the can into the simmering pot of chili, because I'm pretty sure pineapple and black bean turkey chili don't mix.

    (I could be wrong, mind you, because pineapple on pizza is pretty freaking amazing... but I'm totally okay with living the rest of my life without trying turkey-pineapple chili.)

    I did manage to grab the right can on my second trip to the pantry, but that still left me with an open of pineapple I needed to use up somehow... and, coincidentally enough, I also had a half-finished can of coconut milk that also needed a purpose.

    Which is how these muffins came to be. I paired that can of pineapple and that last bit of coconut milk, and layered loads of lovely tropical flavour to bring a little sunshine into an otherwise pretty miserable winter. They are the antidote to slushy sidewalks and blistering cold winds.

    Much like their namesake cocktail, these muffins pair tangy pineapple and sweet coconut with a splash of dark rum, minus the hassle of busting out the blender.

    Unlike the cocktail, however, it's perfectly enjoyable to enjoy a couple of these first thing in the morning or as an afternoon snack at the office.

    They do look pretty cute topped with a paper umbrella, though, if you really must.

    Description

    A combination of coconut and pineapple gives these muffins loads of sweet, tropical goodness. They're just the thing to bring a little sunshine to your day when the weather outside is less than tropical and you can't afford to hop the next plane to Mexico.


    Ingredients

    Scale
    • ½ cup coconut oil, melted
    • 1 cup sugar
    • 2 large eggs
    • ½ cup coconut milk
    • 1 can (398 ml / 14 oz) crushed pineapple, drained
    • 2 tbsp dark rum (or 1 tsp vanilla extract)
    • 1 cup unsweetened desiccated coconut
    • 1 ¼ cup all-purpose flour
    • 2 ½ tsp baking powder
    • ½ tsp salt

    Instructions

    1. Adjust oven rack to upper-middle position and preheat oven to 375°F. Lighly grease the cups of a 12-cup muffin pan, or line with paper cups.
    2. In a large bowl, stir the coconut oil with sugar until smooth. Whisk in the eggs, one at a time, beating well after each addition. Stir in coconut milk, crushed pineapple, rum, and ¾ cup coconut.
    3. Add the flour, baking powder and salt to the bowl, and stir until just barely combined. Divide batter between muffin cups and sprinkle with the remaining coconut. Bake until the muffins are golden brown and a toothpick inserted into the middle comes out with a moist crumb, about 20-25 minutes. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool off completely.

    Solid Gold: Saffron Panettone w/ Apricots and Almonds

    I've been playing around with saffron a lot lately. I love the way that it lends a warm yellow colour to everything it touches, the way it adapts itself equally well to savoury or sweet dishes, and the way the smallest pinch of real saffron can perfume an entire dish with that undefinable flavour that is unmistakeably saffron.

    So when I stumbled onto Bon Appetit's recipe for Saffron Panettone one day, I knew this was a sign from above.

    For one, I still had some candied Meyer lemon peel in my pantry, and one of the most important elements of a proper panettone is good-quality candied citrus. Also, I'd just bought some beautiful brown-and-gold parchment panettone molds at the neighbourhood kitchen shop (or, as I like to call them, my dealers-slash-enablers).

    This recipe makes two medium-sized panettones, which means you'll have one for yourself, and another one to pass along as a gift.

    It's not quite as light and airy as some panettones I've had, most likely because I opted not to knead the dough quite as long as is traditional (some recipes suggest up to 50 minutes!), but I found that the loaves were still beautifully pillowy on the inside, with a fine crumb and a buttery-yellow colour thanks to the eggs and saffron.

    Leftovers, assuming you don't devour the entire loaf in a single sitting, will go stale within a day or two. But don't despair - stale panettone can be used to make a fabulously upscale version of bread pudding, or some of the most decadent French toast you've ever had.

    And while we're talking saffron, I must entreat you to use genuine saffron if you're going to bother with this recipe. Yes, it's notoriously expensive, but it's most definitely worth your while to splurge.

    That small bundle of red threads packed into a tiny little box is surprisingly potent, which means a little goes a loooong way - you'll rarely use more than a pinch or two in any given recipe. Not to mention that while the imitators might be able to duplicate the colour of saffron, they never come close to duplicating the flavour. So skip your afternoon latte for a day or two, and splurge on a box of proper saffron instead. You'll thank yourself for it.

    Saffron Panettone with Apricots and Almonds

    Description

    This new-school take on traditional Italian panettone has a beautifully pillowy texture and a delicate crumb on the inside, plus that trademark buttery-yellow colour that comes from even the smallest pinch of saffron.


    Ingredients

    Scale
    • 1 cup whole milk
    • 8 green cardamom pods, crushed
    • ½ tsp crumbled saffron threads
    • 4 tsp active dry yeast
    • ½ cup sugar, divided
    • ½ cup butter, melted
    • 4 large eggs
    • ¾ tsp salt
    • 4 ½ cups all purpose flour, divided
    • 1 cup diced candied orange or lemon peel
    • 1 cup chopped apricots
    • 4 tbsp milk
    • 2 tbsp sugar
    • ¼ cup sliced almonds

    Instructions

    1. In a small saucepan set over medium heat, bring milk, cardamom pods and saffron to a simmer. Remove from heat. Cover and let stand for 20 minutes, or until the saffron has thoroughly infused the milk.
    2. Strain milk mixture into a large mixing bowl and sprinkle with the yeast and 1 teaspoon sugar. Let stand for about 10 minutes, or until yeast is dissolved and mixture is foamy. Stir in remaining sugar, along with butter, eggs and salt.
    3. Add 2 cups flour, and stir until smooth. Gradually stir in another 2 cups of flour along with citrus peel and apricots, working until a soft dough starts to come together.
    4. Turn the dough out onto a clean, lightly floured surface. Knead until dough is soft, smooth and elastic (about 8 minutes), adding up to ½ cup more flour as needed to keep from sticking. Place dough in a large, lightly oiled mixing bowl. Cover with a clean dishcloth, and place in a warm, draft-free spot to rise until doubled, about 2 hours.
    5. Lightly butter two 8" paper panettone molds. Punch down the dough and turn out onto a work surface. Divide dough into two equal-sized pieces, and work each one into a ball. Place a ball of dough, seam side down, into each of the prepared molds. Cover loosely with a clean towel, and place in a warm draft-free spot to rise until doubled, about 45 minutes.
    6. Position rack in center of oven and preheat to 350°F.
    7. In a small bowl, stir together milk and 2 tbsp sugar. Brush top of each loaf with milk and sugar mixture, then sprinkle with almonds.
    8. Bake in preheated oven until loaves are golden brown and tester inserted near center comes out clean, about 45 minutes. Set the loaves on a wire rack to cool for about 30 minutes before serving.
