It’s finally starting to feel like summer is on its way, and that can only mean one thing… ice cream!
(OK, it also means barbecues, and going barefoot, and flirty sundresses, and sunshine until past 8pm, and all sorts of other good things… but ice cream is still the one I’m most excited about.)
To celebrate the season, I’m sharing a recipe for Chocolate Peanut Butter Brownie Ice Cream Sandwiches on the Peanut Butter and Co All-Star Recipe Blog.
I started by whisking their Dark Chocolate Dreams peanut butter into a custard base to make a super-rich, super-chocolatey, super-smooth ice cream. And then, because I couldn’t leave well enough alone, I layered it with two thin layers of ooey-gooey barely-baked brownie.
I stopped there, but you can make these over-the-top chocolatey by drizzling on some hot fudge sauce. Because you can. And because it’s probably amazing.
