Good morning friends! I’m over on the Peanut Butter and Co All-Star Recipe Blog today, with a recipe for a seriously spectacular triple-layer carrot cake frosted with swirls of tangy, maply, peanut buttery icing.
I’m especially proud of this recipe, because it was the nudge I needed to get over my phobia of frosted layer cakes. Turns out they’re actually not nearly as scary as you’d think, so long as you’re armed with a lazy susan and a spatula.
And since it’s made with carrots and cream cheese, it practically counts as health food. Right? :)
