Rosemary-Orange Granola Coffee Cake

Like the granola that inspired it (and that is sprinkled atop it), this surprisingly sophisticated coffee cake is scented with sunny orange and herbaceous rosemary.

Ingredients
  • 1¾ cups flour
  • 1½ tsp baking powder
  • ½ tsp salt
  • ¾ cup buttermilk
  • ¾ cup sugar
  • ¼ cup olive oil
  • 1 egg
  • 1 orange, zested and juiced
  • 2 tsp finely chopped fresh rosemary
  • 1 tsp vanilla extract
  • ½ cup Not Yer Granny's Granola (Hello Orange or Maple)
Instructions
  1. Preheat the oven to 375F. Lightly grease a 9-inch round pan, and set aside.
  2. In a medium mixing bowl, stir together the flour, baking powder and salt.
  3. In a second bowl, whisk together the buttermilk, sugar, olive oil, egg, orange zest, orange juice, rosemary and vanilla.
  4. Add the dry ingredients to the wet, and stir together until just combined into a thick batter. Scrape into the prepared pan, and smooth out the top. Sprinkle the granola onto the top of the batter.
  5. Bake in preheated oven for 25-30 minutes or until a toothpick inserted in the center of the cake comes out clean. Set on a wire rack to cool completely before serving.
