These pancakes are like banana bread in pancake form - llight and fluffy, and loaded with fresh banana flavour and a hint of cinnamon in every single bite.

Ingredients
  • 1½ cups flour
  • ¼ cup flax meal (optional)
  • 2½ tsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 2 medium ripe bananas, mashed
  • 1¼ cup milk
  • 2 large eggs
  • 3 tbsp honey
  • 3 tbsp butter, melted (plus more for the griddle)
  • ½ tsp vanilla extract
Instructions
  1. In a mixing bowl, combine flour, flax meal (if using), baking powder, cinnamon and salt.
  2. In a second mixing bowl, whisk together the remaining ingredients until combined. Pour into the bowl of dry ingredients, and stir with a whisk until relatively lump-free.
  3. Heat a large skillet or griddle over medium heat. Grease lightly with butter. When the butter starts to sizzle, drop in ⅓ cup portions of batter. Cook for about 2 minutes, or until a few bubbles start to form on the surface, then gently flip over and continue cooking until golden brown, about 1-2 minutes longer. Transfer the finished pancakes to a baking tray in a warm oven. Repeat this process until the batter is finished, re-greasing the pan as needed.
  4. Serve the pancakes right away with lots of real maple syrup, and possibly some whipped cream and toasted pecans.
  5. Leftover pancakes can be wrapped with parchment paper and frozen in a zip-seal plastic bag. To serve, reheat the frozen pancakes in a toaster oven.
