I may not have kids, but it’s hard not to get swept up into the back-to-school brown bag frenzy this time of year.
I mean, us big girls gotta eat lunch too… and who doesn’t love an excuse to pick up a cute new lunch tote?
My biggest challenge when it comes to packing lunches is the fact that I’m not particularly fond of sandwiches, which rules out a large part of my possible lunch-making arsenal.
Thankfully, I’ve found lots of non-sandwich options I can throw into the rotation instead, like soups, calzones, grain or pasta salads, frittatas, and tortilla wraps.
(I blame my sandwich phobia on a period in elementary school where my father packed me a salami on whole wheat sandwich every. single. day. for several weeks. I still get a little twitchy at the thought of salami sandwiches. Twitch twitch twitch.)
This particular wrap is inspired by the wicked good curried chicken waldorf salad a little cafe near my office used to serve, in portions so enormous that I’d often eat my fill and still have enough left over to fill a wrap for the next day’s lunch.
Sadly, the cafe is long defunct, but I’ve managed to re-create it for my friends at Turkey Farmers of Canada.
