Get Your Grill On: Grilled Turkey Breast with Mushroom and Wild Rice Stuffing

Earlier this year, I was lucky enough to participate with a bunch of talented Canadian bloggers in developing recipes for Get Your Grill On, a joint campaign by the Turkey Farmers of Canada and Mushrooms Canada. Their request was simple – create a fabulous dish that combines cultivated mushrooms and turkey, and that can be prepared on the grill.

I put my thinking cap on, and eventually came up with two recipes, the first of which is this Grilled Turkey Breast with Mushroom and Wild Rice Stuffing.

Grilled Stuffed Turkey Breast

This grilled stuffed turkey breast is kind of a play on the traditional Thanksgiving turkey with rice stuffing, but with a summertime twist.

The stuffing has all the usual flavours – rice, celery, shallots, dried cherries, and sage – plus wild rice and a blend of thinly sliced shiitakes and button mushrooms to add a nutty, earthy sort of flavour.

It’s not entirely like your usual holiday turkey, though.  Using a butterflied turkey breast makes it much quicker to prepare than a whole bird, while grilling gives the turkey a subtle smokiness and a crispy golden-brown outside that no oven could ever replicate.

Sliced into thick medallions, it’s a downright elegant dish that would be right at home on your table for a summertime dinner party.

    What a creative recipe, Isabelle! This is just a dreamy Thanksgiving solution for us Americans living in a place where whole turkeys are impossible to find but turkey breast can be scouted out. Pinning for fall use!!
