After last week’s carb-fest, I’m feeling the need for something a little lighter and healthier… a little greener, even.
After all, in less than one month, I’m headed off for a week-long beach vacation in sunny Puerto Rico, and I’d hate for anyone to mistake me for a beached whale. (Okay, so maybe it’s not that bad, but there are still a few parts of me that are… umm… fluffier than I’d like them to be.)
Thankfully, when it comes to these five gorgeous salads, swapping out my bowlful of pasta and sauce for a plate of lightly-dressed greens and veggies isn’t exactly a sacrifice.
