Cubano Grilled Cheese

A Cuban favourite gets a Canadian twist thanks to Heidi, an aged cow's milk cheese from British Columbia that melts down to ooey, gooey perfection. If you can't get your hands on Heidi, feel free to substitute grated Swiss or Emmenthal cheese for a more traditional version.

Ingredients
  • 4 slices sourdough bread
  • 2 tbsp butter, softened
  • 1 tbsp honey mustard
  • 1 cup grated Farm House Heidi cheese
  • 4-6 slices deli ham
  • 4-6 slices cooked roast pork
  • 1 large dill pickle, cut lengthwise into slices
Instructions
  1. Preheat a cast-iron grill pan over medium heat.
  2. Spread all four slices with butter and mustard, and top each one with ΒΌ cup of shredded cheese. Layer on the ham, roast pork and pickles, and close up the sandwich.
  3. Generously butter the tops of the sandwiches, and place on the hot grill pan, buttered side down. Grill for 2-4 minutes per side, or until the sandwiches are golden-brown and crusty on the bottom. Butter the top of the sandwiches, then turn over and grill for another 2-4 minutes, or until both sides are golden brown and the cheese is melted. Serve immediately.
