Savoury Almond-Curry Granola

This crunchy, savoury granola is flavoured with curry, coconut and sliced almonds. It's the perfect way to add flavour and crunch to a simple bowl of soup or a hearty winter salad.

Ingredients
  • 1 egg white
  • 1 cup old-fashioned rolled oats
  • ½ cup sliced almonds
  • ¼ cup raw pumpkin seeds
  • ¼ cup unsweetened shredded coconut
  • 1 tsp curry powder
  • ½ tsp chili powder
  • ½ tsp kosher salt
  • ¼ tsp garlic powder
  • 3 tablespoons olive oil
  • 1 tbsp maple syrup
Instructions
  1. Preheat oven to 350F, and line a large baking sheet with parchment.
  2. In a small bowl, whisk the egg white until slightly foamy. Set aside.
  3. In a large mixing bowl, stir together the oats, almonds, pumpkin seeds, curry, shredded coconut, chili powder, salt, and garlic powder. Drizzle in the olive oil and maple syrup, and stir to combine. Add the egg white, and stir to coat. Spread out into an even layer on the prepared baking sheet.
  4. Bake in preheated oven for 20 minutes, then gently stir and return to the oven for another 10-15 minutes or until lightly toasted and browned. Let cool, then transfer to an airtight jar until ready to use.
