Kim's specialty is quickie no-cook desserts, like these easy-peasy parfaits made from coconut whipped cream, cherry pie filling and shredded coconut.

Ingredients
  • 1¾ cup heavy cream
  • ¼ cup coconut milk, chilled
  • 1 (8 oz) brick of cream cheese, softened
  • 3 tablespoons of sugar
  • 1 can cherry filling
  • ¼ cup shredded coconut
Instructions
  1. In a stand mixer combine the heavy cream, coconut milk and sugar. Using a whisk attachment start on low and work your way up to high speed. Mix until it becomes light and fluffy. You're essentially making coconut whipped cream.
  2. Now add your cream cheese and mix until smooth.
  3. Scoop the mixture into a parfait dish. Top with ½ the cherry pie filling, then repeat.
  4. Toss some shredded coconut over top.
  5. Chill in the fridge for 1 to 2 hours.
  6. Serve with a big old cherry-coconutty smile!
